Happy Monday!  So while planning out recipes this weekend to share on the blog, I realized that I really don’t have many breakfast dishes!  There is no exaggeration when I say that breakfast really IS the most important meal of the day.  It gives your body the fuel it needs to perform every day physical and mental activities, it boosts your metabolism and also aids in weight loss.  So with that being said, I thought I might share one of my favorite breakfast recipes that is healthy, super filling and easily thrown together using ingredients you probably already have in your fridge.

Southwest flavors such as cumin and cilantro are great ways to spice up any dish, so why not your breakfast??  I topped this with fresh salsa and some avocado slices for some additional flavor and it was delicious!  This recipe makes the perfect amount for two people so Chris was happy to partake in taste testing as well.  I also love this because it would taste amazing in a whole wheat wrap too!   I’m definitely planning on adding this to our weekly meal plan rotation, it’s just that good folks.

Oh and I can’t tell you how excited I am that it’s Bachelor Monday!!  If you have read my other posts months back then you know what a huge Bachelor/Bachelorette fan I am.  I mean let’s be real people……hot guy + drama + girl fights + ladies who can’t handle their alcohol = one hell of a trashy reality show!  Last week Ashley S. (yes the crazy one who clearly is either a) on something or b) just plain coo coo for cocoa puffs) was finally denied a rose and sent home.  Now I thought for sure he would have sent her home after her craziness on the first night, but I guess he saw potential in her?  Nah not buying it.  I immediately guessed that the show probably asked him to keep her on for ratings.  Well I think I was probably right seeing as I came across her “acting profile” online!  C’mon…..seriously Bachelor?  Are you that hard up for ratings that you’re hiring actresses now to pose as contestants??  Just sad.

But are we really surprised?  It is reality TV after all and I still looooove to watch!  I mean what else will I talk about with my girlfriend at the gym the next day.  So far my favorites are Brit, Becca and Jade, although Brit really needs to try and keep it together or she’ll ruin any chance she has with Chris!  Not that she’ll have ANY problem finding someone after she leaves, she’s GORGEOUS.  Seriously….total girl crush.  Kaitlyn is hilarious to watch, but I just don’t see her and Chris having that great of a connection.  Annnnd Ashley I. needs to cool it with the virgin talk, that’s commendable and all, but you are losing credibility with each minute the show airs.

All in all it will be funny to see how everything ends up!  This isn’t my favorite season by any means, but nevertheless it’s still entertaining to watch.  Hope you all enjoy this recipe!

Skinny Southwest Scramble
 
Serves: 2 Servings
Ingredients
  • 3 large eggs
  • 2 large egg whites
  • ¼ tsp. cumin
  • ½ tsp. oregano
  • ¼ tsp. paprika
  • Salt and pepper, to taste
  • 2 tsp. olive oil
  • ½ orange bell pepper, chopped
  • ½ red bell pepper, chopped
  • ½ zucchini, grated
  • ½ cup frozen corn
  • 2 green onions, chopped
  • ¼ cup cilantro, chopped
  • ½ avocado
  • ¼ cup salsa
Instructions
  1. In a medium bowl, whisk together eggs, cumin, oregano, paprika, salt and pepper until egg mixture is foamy. Set aside.
  2. In a large skillet, heat oil on medium-high heat and saute bell peppers until soft and fragrant, about 4 minutes. Add zucchini, corn and green onions and continue cooking another minute.
  3. Add in egg mixture and stir until eggs are cooked, about 3 to 5 minutes. Then mix in cilantro.
  4. Top with salsa and serve with avocado slices, enjoy!
