Better-than-Chipotle Bowl

Yeah I went there.Ok so I had this unhealthy craving for Chipotle the other day {who doesn’t?!} and knew I had to do something about this or I would end up buying one of everything on the menu. Ok not really, but I seriously needed a good Chipotle fix.
So I basically chopped up everything I had leftover in my fridge and pantry and threw it all into a bowl to make this colorful, and yes completely CLEAN, dish. It has all the flavors of Chipotle without the extra calories! I used all fresh ingredients, a bit of sea salt, a drizzle of olive oil and some limes. Kind of amazing I must admit.
This recipe makes a great salsa or even a fabulous topping on chicken, pork or steak. You could even garnish your tacos with this….and to quote the Frank’s Red Hot lady, you can literally put this sh*t on everything!
But in all seriousness, this is a great side dish to add flavor to any meal, especially when prepping your food for the week. I paired this with whole wheat pita bread and some chicken and it was a huge hit. Oh and all the chopping is the hardest part of this recipe, you can whip this entire thing together in 5 minutes!
How can you refuse?
- 1 onion, chopped
- 1 garlic clove, chopped
- 1 Tbsp lime zest
- 3 Tbsp lime juice (about one lime)
- ¼ tsp. sea salt
- 4 Roma tomatoes, chopped
- 1 cup orange, red, yellow bell pepper, chopped
- 1 jalapeno, seeded and diced
- 1 cup black beans
- 1 cup frozen corn
- ½ cup cilantro, roughly chopped
- 2 tsp. olive oil
- In a large bowl, combine all ingredients and stir well. Allow flavors to marinate for about 2 hours then serve and enjoy!
