6 Favorite Healthy Salads for the Week
With summer right around the corner, I’ve really been trying to plan out more healthy salad recipes to make each week to help keep myself on track as well as to have a good variety and mix things up so I’m not eating the same thing every day! Luckily fresh produce is in high abundance this time of year so it’s certainly not hard to stock up on your favorite veggies which is why I love making salads.
Salads definitely don’t have to be boring either! These light and healthy salads are a few of my favorite go-to’s that are full of fresh veggies, delicious proteins and TONS of flavor! They are also super versatile and really easy to make all your own. And with the weather finally warming up, there’s nothing like a delicious crisp salad to kick off spring!
This Roasted Chickpea and Kale Salad is drizzled with a deliciously creamy tahini dressing which tastes perfect with the crunchy chickpeas! It’s hearty, healthy and full of so much flavor which is why it’s one of my favorite go-to salads!
This Detox Salad is one the most popular salads on my blog and for GOOD reason! It’s loaded with fresh veggies like brussels sprouts, broccoli, kale and cabbage and also makes a TON so you can enjoy it all week too!
Is there anything better than a huge salad loaded with tons of fresh chopped veggies, delicious southwestern flavors and tossed with a creamy avocado dressing?! No I didn’t think so and I think this is one you’ll really enjoy!
This Asian Chicken Salad is such a staple in our home! I mean the combination of cabbage and cilantro mixed with crunchy carrots, bell peppers and snap peas all tossed together in a delicious ginger sesame vinaigrette has me completely addicted!
This Warm Brussels Sprouts and Sage Salad is a delicious sweet yet savory dish that is easily thrown together for a quick healthy meal option! It also tastes great served cold too!
I just love this Roasted Butternut Squash and Arugula Salad! It’s a veggie medley to die for all tossed together with fresh corn, white beans, red onion and a delicious balsamic vinaigrette. This is actually one of my favorite go-to dressings too and I always have it on hand in a sealed airtight jar in the fridge so I can enjoy many salads with it!
