Ham, Lentil & Rice Salad

The sweet-tart flavors of pineapple go effectively with the salty-rich flavors of ham, which is why they’re so typically put collectively. So, why repair it if it ain’t broke? We’ve used a modest quantity of excellent smoked ham, simply sufficient to broadcast its taste with out overwhelming the dish.

Makes four servings

Components

2 cups hen broth, home made or canned

1 cup water

four cloves garlic, minced

1 cup lentils

½ cup fragrant rice, corresponding to basmati, jasmine, or Texmati

⅓ cup recent lemon juice

four teaspoons vegetable oil, corresponding to olive or canola oil

¼ teaspoon salt

½ teaspoon pepper

1 can (20 ounces) juice-packed pineapple chunks, drained

1 small pink onion, minced

½ pound reduced-sodium smoked ham, lower into skinny matchsticks

Instructions

1. In a medium saucepan, convey the broth, water and garlic to a boil over medium warmth. Add the lentils and scale back to a simmer. Cowl and cook dinner for 10 minutes. Add the rice and cook dinner till the rice and lentils are tender, about 20 minutes.

2. In the meantime, in a big bowl, mix the lemon juice, oil, salt and pepper.

three. Add the nice and cozy lentil combination, the pineapple and pink onion to the dressing and toss to mix. Let cool to room temperature.

four. Add the ham, toss to mix, and serve at room temperature or chilled.
